Double Double – Double Your Efforts With Half of the Trouble

It had been a long day. I spent the morning editing after working out, household chores, and running a couple of errands, you know the drill. Then I slammed down lunch, and was out the door for an afternoon shoot. I got home late that afternoon, exhausted from my day, and was greeted with the infamous, “What's for dinner, Mom?”

Now in the past that innocent little question (after the day I had just had) was enough to make me want to crawl into bed and pull the covers over my head. Recently, though, I have been doing something that has revolutionized meal planning in our home, and I want to share the tip with all of you.

Now, anytime I make a casserole, or a crock pot meal, I double it. After all, it's no more work to double the recipe. There's no more mess, as I am already making it for one meal. After doubling my efforts, for very little extra time and energy, I throw the second or double meal, into the freezer. Now, on those crazy days, or a marathon-post-wedding editing day, I know dinner's covered. I just go to the freezer, pull out one of the meals I made ahead of time, and never give it another thought.

You can double almost everything you make, and trust me, you will be so glad you did it. In fact the next time you hear the infamous, “What's for dinner, Mom?” you can say with confidence on your way to a stocked freezer, “No worries, I've got ya covered!”
